- 2 leeks, sliced into 1″ rings (white + light green parts only)
- 2 medium onions, quartered
- 1 whole garlic head, skins removed
- 4 medium carrots, halved and cut into 1″ pieces
- 8 fresh thyme sprigs
- 1 tbsp fresh thyme leaves, chopped
- 3 tbsp extra-virgin olive oil
- Kosher salt and freshly ground black pepper, to taste
- 3 tbs fresh farm honey
- 1 lemon

Instructions
- Preheat & Prep
